Ingredients
  • 1 lb Ground Turkey Note: Vegetarians can substitute with 30 oz or 2 cans of beans
  • 4 oz Fresh Spinach Note: Wilt spinach by nuking in the microwave for 2 minutes
  • 0.25 cup Pitted Kalamata Olives, chopped
  • 0.25 cup Sun Dried Tomatoes, chopped
  • 0.25 cup Yellow Onion, diced
  • 2 each Garlic Cloves, crushed
  • 0.25 cup Crumbled Feta Cheese
  • 0.5 cup Oat Flour Note: I put 1/2 cup of rolled oats in a blender to make oat flour
  • 1 each Egg Note: Vegans can make a flax egg by mixing 1 Tbsp of ground flaxseed with 3 Tbsp of water.
  • 1 tsp Oregano
  • 1 tsp Black Pepper
  • 1 pinch Salt
Servings: Burgers
Instructions
  1. Place all ingredients into a bowl and mix together.
  2. Make burger patties the size of the palm of your hand (approx. 4 oz, size of hockey puck)
  3. Grill on medium for 20 minutes. Flip burgers every 5 minutes. If you don't have a grill, these will still taste great cooked on a stove top.
  4. Eat plain OR eat burgers on a whole wheat bun/arnold's wheat thin/bread OR wrapped in a bib of lettuce OR place between 2 grilled pineapple slices.
  5. Optional: Add lettuce, tomato, red onion on your burger and top with a spicy mustard, hummus or tzatziki sauce.
Recipe Notes

These burgers make for great leftovers for breakfast, lunch, or dinner! Add to your morning eggs, add to your lunch salads, or eat as another burger for dinner!

*Vegetarians can make Greek Bean Burgers by substituting cooked lentils, black beans, or white beans (3o oz or 2 cans of beans, drained and rinsed) in place of the ground turkey.
